Forget the flashy chopping. Master these four cuts instead.

You do not need to dice an onion in four seconds. What you need is a sharp knife, a stable board, and four cuts you can do reliably: a rough chop, a fine dice, a thin slice, and a chiffonade for herbs.

Grip the blade, not the handle. A pinch grip -- thumb and forefinger on the blade just past the bolster -- gives you the control that makes every other technique easier and safer.

Sharpness is safety. A dull knife slips and forces you to push harder; a sharp one glides where you aim it. Hone before each session and have your knives properly sharpened a few times a year.
